When using fresh flowers on a wedding cake, place the flowers at the last moment possible before the reception or party to ensure the flowers stay fresh and crisp by the time the cake is cut.
Top or Corner Bundles
Wedding cakes can be topped with flower bundles or bouquets rather than with figurine cake toppers. The flower bundle should sit on the top tier of the cake and be no wider than the circumference of the tier. The color and type of flower depends on the design of the cake; a pure white cake can have flowers of any color or simply white flowers.
Usual cake flowers include roses, orchids, lilies, carnations and daisies. The Flowers must be positioned upright and, therefore, must have most of their stems removed. If the cake is covered in fondant or another smooth covering, place a small drop of frosting or icing on the back of each flower head so that it sticks to the cake. Flower Cascade
A flower cascade is similar to the crawling vine, except that the flowers fall down the side of the cake in one even line. Beginning at the top with the largest bundle, a cascade continues the same style of flower down the sides in a continuous stream.
Flower Tiers
A flower tier is when each tier of cake is covered in an entire row of large fresh flowers to give the appearance of alternating cake and flour tiers in the cake. A spaced cake stand is required to make separate flower tiers. A spaced cake stand leaves open air in between each tier. Large flowers, either roses, carnations or lilies are then placed on top of each tier to fill the open space and give the illusion of one solid cake.
Easy to Decorate Wedding Cake
By definition, there is nothing easy about a wedding cake. However, if you’ve been assigned to the daunting task for the first time, there are a few do’s and don’ts to stick to in order to create the most professional-looking cake possible. When experience is lacking, the best way around it is to keep it simple.
Shape
1. There are a variety of shapes for wedding cakes, including round, square, off-balance, triangular and ball. While some of the more exotic shapes and styles are impressive and eye-catching, they are by no means easy to decorate.
Most odd-shaped cakes are difficult to create much less decorate; even square shaped cakes are difficult to make as straight lines and corners are not easy to construct out of soft cake. The easiest cake shape to both create and decorate is the traditional round.
Tiers
2. Wedding cakes are known for their tiers, however, tiers can be tricky. Depending on the need of the bride and groom, it is possible to make a wedding cake with a single tier. If tiers are necessary, try creating either two or three. Secured together with a dowel through the middle. Do not decorate the tiers until they are stacked.
Frosting
3. Though fondant covered cakes (fondant is a smooth sugar-based edible clay used to cover cakes) are the traditional “wedding cake”, frosting is an easier choice. Unless you are experienced in fondant usage or are will to practice multiple times before making the cake, fondant should be avoided.
Frosted wedding cakes can be just as beautiful as fondant covered cakes, and can be embellished and decorated with the same elements. When choosing a frosting, stick to a butter cream or cream cheese based topping so as to maintain the white appearance, or use food dye if creating a colored cake.
